65. Tronchetto of Sant'Ambrogio di Ferentino

History

The 'Tronchetto di Sant'Ambrogio' is an artisan cake, which owes its name and inspiration to an ancient and moving story linked to the patron saint of Ferentino. Legend has it that Saint Ambrose was tied to the trunk of a tree and condemned to be burned alive. The flames were about to envelop his body, when an extraordinary event happened: the trunk did not catch fire and he emerged unharmed. An event that was interpreted as a divine sign: Saint Ambrose was saved. The product is made from a mixture of flour, sugar, eggs, honey and milk to which walnuts, hazelnuts, pistachios, sultanas and pine nuts are added.

The product

The Tronchetto di S. Ambrogio, which is characterised by its bulbous shape and the grains of sugar sprinkled on its surface, is brown in colour. Its high olfactory intensity is characterised by pronounced notes of egg, butter and dried fruit, combined with hints of honey and vanilla. The taste is sweet, slightly salty and acidic. Soft and with a medium aromatic persistence.
