63. Serpette of Monte Porzio Catone

History

The origins of the Serpette di Monte Porzio Catone are ancient since they originated as biscuits to be dipped in wine, another typical product of the area. The secret of their preparation lies with the families of the town and the Egidi oven, which has been keeping the tradition alive since 1966. The biscuit is prepared with flour, sugar, butter, eggs, lemon and yeast.

The product

Serpettes, characterised by their distinctive 'S' shape, have a deep beige colour. The medium olfactory intensity is characterised by pronounced notes of egg and butter, combined with hints of lemon. The taste is sweet, with a slight salty and acidic note. Good crispness and medium aromatic persistence.
