53. Frittellone of Civita Castellana

History

The Frittellone is a typical carnival speciality of the municipality of Civita Castellana. Here Carnival is very important and famous, very much felt not only by Civitonians but also by the inhabitants of neighbouring towns. It is a traditional peasant recipe, based on flour, eggs, water, oil, salt and pecorino cheese, although some recipes do not call for the use of eggs. The preparation is very simple and the product can be eaten throughout the day, accompanied by a glass of wine. A typical dish of Tuscia, there are records of similar preparations on the tables of the Romans and Etruscans.

The product

Frittellone, with its characteristic cigar-like rolled shape, has a golden yellow colour. The nose is characterised by pronounced notes of egg and cheese combined with hints of lard. The taste is moderately salty, with a pleasant sweet note. High smoothness and medium aromatic persistence.
