History
Nusche are a typical Christmas product of San Vito Romano, a staple in every kitchen in the town. The preparation is based on Roman courgettes and starts as early as the summer, leaving those that want to grow to the extreme to prepare the dish. Once picked, the pumpkin is cut into slices and put to dry in the sun through straws hung on balconies. Once dried, the pumpkins are stored until Christmas when they are soaked for a day and cooked in boiling salted water, then drained. Once dry, they are floured and fried, then marinated in a mixture of vinegar, citrus peel, mint, garlic and sage. After a few hours they are ready to be served.

Nusche are characterised by their ring shape and light beige colour. The medium intensity on the nose is characterised by pronounced notes of vinegar and sage, combined with vegetal hints of courgette, citrus and garlic. The taste is medium salty and acidic, with a slight sweet note. Low aromatic persistence.
